My daughter is a huge D&D fan, has a case for her hundred or more dice, has half a dozen books on plots, characters, monsters, etc., has floor tile sets, and a custom DIY blind for when she's DM'ing. What does a D&D fan want for Christmas?
As a D&D fan myself, an iPad would be an excellent gift. It can take notes, create puzzles, and keep track of all the character and monster stats (including keeping track of character and monster HP), plot details, and the maps. Better yet, it can play music (and the music can be composed to one's liking).

Semi-precious stones or metal dice with custom dice trays? Unless you want to splurge and get her a custom table with a built in monitor.

Is she tech-inclined and have a creative flair? You can get her dungeon design/mapping software as well. You can also commission artists to create custom character portrait/tokens/etc.

Thanks. She has special felt lined dice case with many metal and resin dice, many of the resin ones have semi-precious stones inside, I believe. She also has a collapsible, felt lined die rolling tray. She collects and paints miniatures as well, but she's particular in those she wants.

She's super creative, but not tech savy yet. If there's a software I could buy for dungeon mapping I think she'd like that. She's hugely into the Sims and has traded a lot of her designed custom content with others online.

Some pointers for software:

Wonderdraft (world maps): https://www.wonderdraft.net/
Dungeondraft (dungeon maps): https://dungeondraft.net/
Inkarnate: https://inkarnate.com/
Campaign Cartographer 3 https://www.profantasy.com/default.asp - this has a very steep learning curve, it's almost like CAD. Very old school, powerful but tricky.

There are lots of free and paid assets for most of these software floating around as well, kinda like the Sims custom content world. It might be a great outlet for her creativity.

Here's a forum for fantasy cartography:

It even has plenty of software recommendations.

Yes, I'm even a member of that website.

Ortelius is an excellent cartography software (Mac only):

Since the company went under, it's perpetually free.

Edit:

Here's a tutorial video:

It can be used to create fantasy maps of any era, not just urban fantasy maps.

Thanks AoD, I think I’ll buy these two:
Wonderdraft (world maps): https://www.wonderdraft.net/
Dungeondraft (dungeon maps): https://dungeondraft.net/

And wrap the invoice/credentials around a gift certificate from a local retailer, maybe https://hairyt.com/? I know she likes https://store.401games.ca/ but likely doesn’t know about the Hairy Tarantula. Any other recommended retailers?

Nice! I have Wonderdraft and it's pretty easy to use. I can't imagine she wouldn't know about Hairy T or Meeplemart on Spadina.

She’s just turned 18 but was a real homebody these last two years with the pandemic, rarely leaving the house. Which is one of the reasons we encouraged enrolment at an away university. She was DM for a group of eight girls all over Zoom.

She's huge into figurines, but that's something you need to pick out yourself.
Your daughter can use Warhammer: Age of Sigmar figurines as well. They are compatible with D&D, given that Citadel Miniatures (owned by Games Workshop, which owns the Warhammer franchise) also manufacture D&D figurines.

My brother is a DM and we play with both official D&D figurines and figurines from Warhammer: Age of Sigmar and the players don't mind at all (it helps that both D&D and Warhammer: Age of Sigmar are fantasy franchises that use figurines).

Here is an example of Warhammer: Age of Sigmar figurines:
