Kerzner International Holdings Limited made waves in 2017 with its announcement of a sprawling residential companion to its famous Atlantis The Palm hotel on Dubai's manmade archipelago, Palm Jumeirah. As the mega-project comes closer to reality, the ultra-luxury hotel developer has now declared that Iranian-American celebrity chef Ariana Bundy will open her debut restaurant at the Royal Atlantis property in late 2019.

Ariana's Persian Kitchen aims to offer Persian cuisine to a wider audience, and will treat more than 140 guests at any time to seafront and skyline views from wooden 'day beds' confined within a garden terrace. The centre of the restaurant will feature a show kitchen complete with a charcoal grill and fire pit serving freshly made breads.

"The stunning design of the resort, combined with the professionalism of the Atlantis and Kerzner teams, convinced me that this was the ideal time and place to open my first restaurant," said Bundy, who is also an accomplished cookery author. "Ariana's Persian Kitchen will bring to life the untold stories of Persian culture through plentiful and beautifully presented dishes. Complex, yet comforting flavours will work alongside an interplay of textures, spices and tastes, all served with charming and generous hospitality."

The Royal Atlantis, currently under construction, bears a design of interconnected aerial links that altogether host 90 swimming pools, including an infinity pool suspended 90 metres above The Palm. Kohn Pedersen Fox Associates has crafted the project to maximize outdoor space and shaded gardens, and its centrepiece, the spa-bridge, joins two tower elements with an outdoor amenities deck.
