I was wondering if anyone knew the difference between these different types of establishments from the City's point-of-view?

A restaurant is an establishment that is dedicated primarily to serving food, but the other three are quite close in definition.

For instance what are the various noise rules that pertain to these types of establishments?.....are they zoned differently?

A restaurant will have a restaurant license.

A bar/club will have an Entertainment license.

Some have both, it gets quite complex, be sure to work with someone who knows exactly how it works if you are thinking of opening one.
