Does anyone know the name of the sandwich place that used to be in the basement unit of 218 Adelaide St West?

It would have been there in the early 2000's but when it shut down I don't know. I used to like the veal sandwich there, very messy but delicious.

Currently I believe it's an Indian street food place called Chaska.

That used to be Burrito Boyz in the 2000's, not exactly a sandwich place though. Maybe you mean before that?
Google Streetview has it as Burrito Boyz back through 2007 (oldest date available), though I recall it there as early as 2005 when I worked nearby on Queen.

EDIT: But if you're talking veal sandwiches, was it maybe a California Sandwiches location? They were famous for that.
