The greasier the better to cut through that alcohol ;p

Since alcohol is acidic...in cooking school I was taught chef's secret weapon is "acidic liquid" which cut through any fatty food.

Acidic liquid includes lemon/lime juice, vinegar, cooking wine
 
Dang I was looking forward to something cool in this cavernous double height retail space (I live very close).

Too bad.
